Bratwurst, onions and mustard are familiar partners, and non-alcoholic wheat beer makes an interesting liquid for gently simmering the sausages before grilling. The onions absorb some of the beer’s character and become a savoury topping for the finished rolls.
Serves / makes: 6 portions
Preparation: 10 minutes
Cooking: 25–35 minutes
Recommended NA beer: NA wheat beer or helles lager
Ingredients
- 6 uncooked bratwurst sausages
- 330ml non-alcoholic wheat beer
- 2 medium onions, thinly sliced
- 15g wholegrain mustard
- 10g unsalted butter
- 5g soft brown sugar
- 6 sausage rolls or hot dog buns
- Extra mustard, to serve
Method
- Melt the butter in a large frying pan over a medium heat.
- Add the onions and cook for 5–7 minutes until beginning to soften.
- Stir in the brown sugar and wholegrain mustard, then pour in the wheat beer.
- Bring to a gentle simmer and add the bratwurst.
- Simmer gently for approximately 15–20 minutes, adding a small splash of water if the liquid reduces excessively.
- Meanwhile, prepare a BBQ for medium direct heat.
- Lift the sausages from the pan and grill for approximately 6–10 minutes, turning regularly, until nicely browned and cooked to at least 75°C for 30 seconds in the centre.
- Continue cooking the onions in the pan until soft and lightly caramelised.
- Place the bratwurst in warmed rolls, top with the onions and serve with extra mustard.
Why Use This NA Beer?
Wheat beer often has a soft, bready character that suits pork sausages, while the beer and onions create a flavourful topping.
Tips and Variations
Use uncooked bratwurst for this simmer-then-grill method and check the manufacturer’s cooking instructions. Avoid boiling aggressively, which can split the sausages.
